What’s New in 2025: Paso Robles
Paso Robles continues to solidify its reputation as a premier wine destination in 2025. With innovative trends, exciting new experiences, emerging wineries, and a calendar brimming with events, there's never been a better time to explore this vibrant region.
Trends We're Seeing
1. Pinot Grigio's Resurgence
Once overlooked, Pinot Grigio is making a significant comeback in California, and Paso Robles is at the forefront. Winemakers like Janell Dusi of J. Dusi Wines have embraced this varietal, noting its popularity among younger consumers seeking approachable and refreshing wines. Dusi's Pinot Grigio, affectionately dubbed "Dusi Water," has become a tasting room favorite, often selling by the case.
Rava, Bianchi, and Castoro all have wonderful Pinot Grigio as well.
2. Sustainable and Eco-Friendly Practices
Sustainability remains a key focus in Paso Robles. Wineries are increasingly adopting eco-friendly practices, from organic farming to energy-efficient facilities, aligning with the growing consumer demand for environmentally responsible wine production.
With Tablas Creek leading the charge, becoming the first regeneratively certified winery in the world, more vineyards are following this decision. As of now, only Tablas Creek, Booker, Robert Hall, and Halter Ranch are regeneratively organic certified (ROC) vineyards.
New Experiences in 2025
1. Sensorio's "Fibre Optic Symphonic Orchestra"
Sensorio, the renowned light installation in Paso Robles, unveiled its most ambitious project yet: the "Fibre Optic Symphonic Orchestra" (FOSO). This immersive experience features 32 light columns synchronized to an exclusive score by composer Nainita Desai, offering visitors a mesmerizing blend of art and music.
2. Luxury Glamping
For those seeking a unique stay, Vinyl Vineyards introduced a luxury glamping experience. Guests can enjoy designer-renovated Airstream trailers set amidst picturesque vineyards, combining vintage charm with modern comforts.
Alta Colina also offers an experience like this at The Trailer Pond, with panoramic views of the vineyards.
